However, the rapid urban expansion has not eradicated the way of life of many fishermen, who continue to catch gigantic tuna as generations before, or the ancient history that emanates from the area&#8217;s salt pans.<\/p><p>In <strong><a href=\"https:\/\/www.visitsalines-colonia.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Col\u00f2nia Sant Jordi<\/a><\/strong>, one can see this union between past and present with the blocks built for tourism alongside ancient stone houses, in a village where the major gastronomic and commercial offerings are concentrated on the small promenade that houses the marina.<\/p><p>Yet, if someone is looking for time-stopped corners, they can pass through the nearby nuclei of <strong>Les Salines<\/strong> (with its beautiful square surrounded by white houses) and <strong>Santany\u00ed<\/strong>, where in its weekly market one can catch a more traditional village spirit.<\/p><blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>Les Salines and Santany\u00ed are towns that, together with Col\u00f2nia Sant Jordi, present a different picture of southern Mallorca.<\/p><\/blockquote><figure class=\"wp-block-image size-full\"><a href=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-8-opt.png\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"684\" src=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-8-opt.png\" alt=\"\" class=\"wp-image-4904\" srcset=\"https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-8-opt.png 1024w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-8-opt-600x401.png 600w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-8-opt-300x200.png 300w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-8-opt-768x513.png 768w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-8-opt-240x160.png 240w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/a><\/figure><p>It can also be found in the fishing village of <strong>Cala Figuera<\/strong>, hidden among the rocky cliffs covered with pines and fig trees.<\/p><p>The <strong>white houses<\/strong> with their green windows and doors give a chromatic touch to remember, and thanks to their absence of beaches, it has been saved from urban bulldozing.<\/p><h3 class=\"wp-block-heading\"><strong>The Cabrera Islands<\/strong><\/h3><p>This area of <strong>Mallorca<\/strong> is for coming to encounter nature. For example, excursions to the <strong>Cabrera<\/strong> archipelago, a group of 19 islets of stunning beauty, a haven of biodiversity, and home to a large number of small reptiles, seabirds, and mammals, depart from the moorings of <strong>Sant Jordi<\/strong>.<\/p><figure class=\"wp-block-image size-full\"><a href=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-9-opt.png\"><img decoding=\"async\" width=\"819\" height=\"1024\" src=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-9-opt.png\" alt=\"\" class=\"wp-image-4909\" srcset=\"https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-9-opt.png 819w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-9-opt-600x750.png 600w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-9-opt-240x300.png 240w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-9-opt-768x960.png 768w\" sizes=\"(max-width: 819px) 100vw, 819px\" \/><\/a><\/figure><p>However, the great wealth is beneath its turquoise waters, with 500 species of marine fauna, such as gilthead bream, sea bass, groupers, octopuses, sea urchins, turtles, and cuttlefish.<\/p><h3 class=\"wp-block-heading\"><strong>The beaches of Col\u00f2nia Sant Jordi<\/strong><\/h3><p>The beauty of <strong>Cabrera<\/strong> competes with the natural attractions near the colony, such as <a href=\"https:\/\/www.economiadigital.es\/tendenciashoy\/viajeros\/destinos\/claves-y-direcciones-para-disfrutar-mallorca-fuera-de-temporada_628466_102.html\" target=\"_blank\" rel=\"noreferrer noopener\">Es Trenc <strong>beach<\/strong><\/a>, with its white sands and clear waters that seem to have been transported from the Caribbean.<\/p><p>At 2.5 km, it is the <strong>longest in Mallorca<\/strong>, which guarantees solitude a very short distance from the village.<\/p><p>On either side of the small urban nucleus, a string of more beaches and coves unfolds, some of which can only be reached by boat, like the excursions offered by <a href=\"https:\/\/nauticacolonia.com\/es\/\" rel=\"noreferrer noopener\" target=\"_blank\"><strong>N\u00e1utica Colonia<\/strong> company<\/a>.<\/p><figure class=\"wp-block-image size-full\"><a href=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-10-opt.png\"><img decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-10-opt.png\" alt=\"\" class=\"wp-image-4879\" srcset=\"https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-10-opt.png 1024w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-10-opt-600x400.png 600w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-10-opt-300x200.png 300w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-10-opt-768x512.png 768w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-10-opt-240x160.png 240w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/a><\/figure><p>One of them is the beautiful and secluded <strong>Cala Marmols<\/strong>Cala Marmols, quite challenging to access if one dares to arrive on foot; <strong>Es Caragol<\/strong> and its abundant underwater fauna thanks to the great presence of seagrass; <strong>Tugores<\/strong> , which allows snorkeling in shallow waters; or <strong>Es Carb\u00f3<\/strong> with some of the most transparent waters in the area.<\/p><h3 class=\"wp-block-heading\"><strong>Lighthouses and rocks<\/strong><\/h3><p>With the swaying of the boat, <a href=\"https:\/\/www.economiadigital.es\/tendenciashoy\/viajeros\/destinos\/mallorca-planes-golf-enoturismo-mercados-pueblos-vueling.html\" target=\"_blank\" rel=\"noreferrer noopener\">the <strong>Ses Salines Lighthouse<\/strong> comes into view,<\/a>a silent guardian of these steep coasts, inaugurated in 1863 at the southernmost point of the island, which can also be reached after an intense five-hour hiking journey along the cliffs from <strong>Cap de Ses Salines<\/strong>.<\/p><figure class=\"wp-block-image size-full\"><a href=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-11-opt.png\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"684\" src=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-11-opt.png\" alt=\"\" class=\"wp-image-4884\" srcset=\"https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-11-opt.png 1024w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-11-opt-600x401.png 600w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-11-opt-300x200.png 300w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-11-opt-768x513.png 768w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-11-opt-240x160.png 240w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/a><\/figure><p>By boat, one also reaches the curious natural formation of <strong>Es Pont\u00e0s<\/strong>, a rock arch that emerges among the clear waters, and which is one of the most sought-after spots by sunset hunters to post on Instagram.<\/p><p>This whimsical geological feature of nature can also be viewed from the shore, sitting on the benches at the <strong>Es Pont\u00e0s lookout point<\/strong>.<\/p><h3 class=\"wp-block-heading\"><strong>The salt pans<\/strong><\/h3><p>But undoubtedly one of the most surreal landscapes is <strong>Las Salinas de d\u2019Es Trenc<\/strong>. This area, declared a Natural Area of Special Interest, has been <strong>producing salt through the evaporation<\/strong> of seawater since Neolithic times.<\/p><blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>The exploitation of sea salt dates back to the Neolithic era, and it had already been recognized by<\/p><\/blockquote><p>The combination of sun, wind, low humidity, and traditional techniques allows for the production of various types of sea salt, like the 10,000 annual tons produced by the <strong>Salinas de Levante<\/strong> company.<\/p><figure class=\"wp-block-image size-full\"><a href=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-12-opt.png\"><img loading=\"lazy\" decoding=\"async\" width=\"819\" height=\"1024\" src=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-12-opt.png\" alt=\"\" class=\"wp-image-4889\" srcset=\"https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-12-opt.png 819w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-12-opt-600x750.png 600w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-12-opt-240x300.png 240w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-12-opt-768x960.png 768w\" sizes=\"(max-width: 819px) 100vw, 819px\" \/><\/a><\/figure><p>It is an artisanal job carried out during the summer months when workers rake the surface layer and pour the product into baskets to remove the water and finish drying under the blazing sun.<\/p><p>It&#8217;s a tough job done before dusk to prevent the air&#8217;s humidity from dissolving the salt crystals.<\/p><h3 class=\"wp-block-heading\"><strong>The tuna &#8220;ronqueo&#8221;<\/strong><\/h3><p>Another activity that remains unchanged over time is the &#8220;ronqueo&#8221; of tuna, the process of cutting and sectioning these gigantic fish.<\/p><p>It is a technique mainly performed between April and May <a href=\"https:\/\/www.economiadigital.es\/tendenciashoy\/viajeros\/la-fascinante-experiencia-de-nadar-entre-atunes.html\" target=\"_blank\" rel=\"noreferrer noopener\">when wild tuna migrate to warmer waters<\/a> to spawn, and throughout June as they return to the Atlantic Ocean.<\/p><figure class=\"wp-block-image size-full\"><a href=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-13-opt.png\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-13-opt.png\" alt=\"\" class=\"wp-image-4894\" srcset=\"https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-13-opt.png 1024w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-13-opt-600x400.png 600w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-13-opt-300x200.png 300w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-13-opt-768x512.png 768w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-13-opt-240x160.png 240w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/a><\/figure><p>From each piece, about 25 edible parts can be extracted, which are prepared in traditional dishes and more sophisticated ones like those offered at the <strong>Salicornia<\/strong> restaurant, located on the seafront as part of the <strong><a href=\"https:\/\/www.hotelhonucai.com\/\" rel=\"noreferrer noopener\" target=\"_blank\">Honucai hotel<\/a><\/strong>.<\/p><p>There, chef <strong>Pablo Tom\u00e1s<\/strong> (who has worked at <strong>Drolma<\/strong> and <strong>El Bulli<\/strong>) makes an interesting reinterpretation of traditional Mallorcan dishes, offered in a space decorated as an extension of the sea.<\/p><figure class=\"wp-block-image size-full\"><a href=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-14-opt.png\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/nauticacolonia2.aplicacionesinteligentes.es\/wp-content\/uploads\/2024\/03\/image-14-opt.png\" alt=\"\" class=\"wp-image-4899\" srcset=\"https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-14-opt.png 1024w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-14-opt-600x400.png 600w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-14-opt-300x200.png 300w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-14-opt-768x512.png 768w, https:\/\/nauticacolonia.com\/wp-content\/uploads\/2024\/03\/image-14-opt-240x160.png 240w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/a><\/figure><p>It&#8217;s the same aesthetic as the <strong>Honucai<\/strong>, a boutique hotel with 78 rooms that is one of the few that, in addition to services like its solarium, meeting rooms, and its sophisticated terrace <strong>The Top<\/strong>, has everything <a href=\"https:\/\/www.economiadigital.es\/tendenciashoy\/viajeros\/destinos\/mallorca-bicicleta-circuito-baleares.html\" target=\"_blank\" rel=\"noreferrer noopener\">prepared to welcome <strong>cyclists<\/strong><\/a> and offer everything from a repair workshop to washing areas.<\/p><p>And if you&#8217;re eager to go cycling but don&#8217;t have a bike, no worries: here you can rent one and let yourself discover new landscapes of southern <strong>Mallorca<\/strong>.<\/p><p><\/p><p><a href=\"https:\/\/www.economiadigital.es\/tendenciashoy\/viajeros\/destinos\/mallorca-colonia-sant-jordi.html\">https:\/\/www.economiadigital.es\/tendenciashoy\/viajeros\/destinos\/mallorca-colonia-sant-jordi.html<\/a><\/p>","protected":false},"excerpt":{"rendered":"<p>The traditions of the fishermen persist in a landscape of salt pans, white sandy beaches, and turquoise waters, with secluded coves and lighthouses to discover.
